I have a really bad sweet tooth this time of year, and I don't eat nearly enough fruit. One suggestion I've seen all over the internet is that I should freeze fruit (like grapes and berries) to trick myself into thinking I'm eating something indulgent. Well, that hasn't really worked out for me, so I researched to see what things I can do to really feel like I'm eating a decadent dessert. This super-easy and healthy yogurt-covered frozen berries recipe (inspired by an upcoming "Power Snacks" recipe book, published by Parragon) is the best thing I've found to combat the summer snacking bug, and it's perfect for parties!
Serve these up with a variation on the fruit (chunks of strawberries, raspberries, and blackberries) for a red, white, and blue theme for the 4th of July, too!
You'll need the following ingredients:
Mix the honey into the yogurt.
Gently stir in a dozen blueberries at a time into the mixture, being careful not to crush them!
Fish them out one at a time with a fork, gently placing them on a parchment-lined cookie sheet.
When the sheet is covered in dipped berries, place it, uncovered, in the freezer for about 2 hours, or until the berries are hard. Then, remove them from the sheet carefully with a spatula, and place in an air-tight freezable container so that they don't get crushed. They can store in the freezer for up to a month!
To eat, take them out and let soften for about a minute. These are great served alongside your next 4th of July party platter. It's a healthier version of bon-bons! (And remember to add a variety of red and blue fruits to add color and healthy flavor to all of your Independence day dishes!)

These look SO good. I just discovered greek yogurt a few months ago and OMG I've been missing out. Blueberries dipped in Greek Gods Honey Strawberry... try it!
