Easiest Ever Garlic Rice Recipe

Awhile back, I read Jessica Fischer's blog and was inspired by the best idea I had ever read in my life. She had shared a recipe that involved cooking rice in the oven. And, as someone who struggled with sticky and under-cooked rice drama, I was hooked. Since then, I have always cooked my rice in the oven. I have adapted several different ways to make it, however, depending on the flavor profile I'm looking for.

Easiest Ever Garlic Rice Recipe 


In a large glass baking dish, pour the rice. Add the coconut oil, then the salt. Finally, top with the water, and stir slightly with a large spoon to break up any clumps that formed from the oil.

Cover with aluminum foil and bake in a 350 degree oven for 20 minutes, or until the water has cooked into the rice.

Remove from the oven, let stand 5 minutes, and serve. This is so fluffy and flavorful!
