Chili make with ground beef is pretty common. When I came across some spicy Italian sausages at my grocer for $1.99 a pound, I had to see what I could do with them. Chili was the first thing that came to mind.
Whipping up a quick sausage chili was simple. I used as many fresh ingredients as I could (which was easy, as my garden was overflowing with onions, peppers, and tomatoes) and got to work with the sausage.
First, I removed the casings and browned them in a big stock pot.
I added some little mild red and yellow peppers... aren't they beautiful?
I continued to cook the peppers and onions with the sausage until they were soft and the sausage was brown.
Then, I turned it into a rich chili. I added 3 cans of chili beans, 3 cups of chopped fresh tomatoes (with seeds and juice), and one cup of water. I then seasoned to my liking with chili powder, garlic salt, cumin, and paprika.
I let it simmer for an additional 45 minutes and served with cornbread. My family loved it!!!
